The Only Snickerdoodle Recipe You Need

Snickerdoodles don't get enough credit. They look simple — just a sugar cookie rolled in cinnamon, right? Wrong. A real snickerdoodle has a tang from cream of tartar, a pillowy soft center, and a crackly crust that shatters when you bite into it.
What Makes a Snickerdoodle a Snickerdoodle
The answer is cream of tartar. It reacts with baking soda to create a slightly tangy flavor and gives the cookie its signature puffy texture. Without it, you just have a cinnamon sugar cookie (which is fine, but it's not the same).
Ingredients
For the dough: - 2¾ cups all-purpose flour - 2 tsp cream of tartar - 1 tsp baking soda - ½ tsp salt - 1 cup softened unsalted butter - 1½ cups granulated sugar - 2 large eggs - 1 tsp vanilla extract
For the coating: - ¼ cup granulated sugar - 2 tbsp ground cinnamon
Steps

The Crackle
Here's the magic: those signature cracks happen because the cream of tartar makes the cookies puff up fast, then the top sets while the inside is still rising. As they cool, the surface cracks. If your snickerdoodles don't crack, your oven might be too low or your cream of tartar might be old.
My Twist
