How It's Made
A real snickerdoodle isn't just a cinnamon sugar cookie — it's the cream of tartar that gives it that signature tang and puffy texture. Mine are soft and pillowy in the middle with a crackly cinnamon-sugar top that shatters when you bite into it. I use a heavier hand on the cinnamon than most recipes (two full tablespoons in the coating), and I pull them when they still look a little soft so the centers stay tender. Every half dozen is rolled, coated, and baked the day before pickup.
